Cashew Cheese
Cashew Cheese is a great option if you’re looking for a healthy alternative to regular cheese, and you can make it right in your own home!
Ingredients
- 1½ cups raw cashews
- ¼ cup water (room temperature), or more as needed
- 2 tbsp lemon juice
- 2-4 cloves of garlic, or ¼ - ½ tsp garlic powder.
(use more or less depending on how much of a garlic flavor you want) - ½ tsp salt
Optional
- 1 tbsp sacha inchi powder
Sacha Inchi Powder has a warm, nutty taste, adding more depth to your cashew cheese
Instructions
Step 1
Soak cashews in a large bowl of water for 2-3 hours. (Up to 10 hours, can leave overnight)
Step 2
Drain cashews, and place in a food processor with the remaining ingredients
Step 3
Blend until smooth. Consistency should be similar to hummus. You may add more water for desired consistency.
Step 4
Place cashew cheese mixture into a container, cover, and refrigerate for 1 day.
Step 5
Serve and enjoy!
