Mushroom Garlic Quinoa
Ingredients
- 1 cup white quinoa (yields about 3 cups cooked)
- 1 tbsp olive oil*
- 2 cups cremini mushrooms, sliced
- 4-6 cloves garlic, minced
- ½ tsp dried thyme
*May substitute with sacha inchi oil. Due to sacha inchi oil’s sensitivity to heat, we recommend cooking on low heat for 6-8 minutes in Step 2.
Optional
- Salt and pepper to taste
- 1-2 tbsp grated parmesan cheese to garnish
(for a healthy alternative, try “cashew cheese“!)
Instructions
Cooking your Quinoa
Step 1
Rinse 1 cup uncooked white quinoa with cold water and a strainer.
Step 2
Add uncooked white quinoa to a pot with 2 cups of water. May add salt to taste.
Step 3
Bring to a boil. Once at a boil, reduce heat to a simmer and cover until water is absorbed, approximately 15-20 minutes.
Prepare Your Mushroom Garlic Quinoa
Step 1
In a large skillet or wok, add olive oil over medium to high heat.
Step 2
Add sliced cremini mushrooms, minced garlic, and thyme. Cook 3-4 minutes or until mushrooms are tender, stirring occasionally.
Optional: Sprinkle with salt and pepper to taste
Step 3
Stir in cooked white quinoa
Step 4
Serve and enjoy!
Optional: Garnish with grated parmesan cheese.
