Healthy, Non-Dairy Alternative to Cheese
- 1½ cups raw cashews
- ¼ cup room temperature water (or more as needed)
- 2 tbsp lemon juice
- 2-4 cloves garlic (or ¼-½ tsp garlic powder, use more or less depending on how much of a garlic flavor you want)
- ½ tsp salt
- 1 tbsp sacha inchi powder (Sacha inchi powder has a warm, nutty taste, adding more depth to your cashew cheese)
Soak cashews in a large bowl of water for 2-3 hours. (Up to 10 hours, can leave overnight)
Drain cashews, and place in a food processor with the remaining ingredients
Blend until smooth. Consistency should be similar to hummus. You may add more water for desired consistency.
Place cashew cheese mixture into a container, cover, and refrigerate for 1 day.
